This PR makes a few small changes to the simulating spectra tutorial to make it compatible with the recently merged desihub/desisim#250 refactor of newexp.
I'd appreciate a separate cross check from @moustakas, @akremin, @geordie666, or others that these instructions work (as a post-facto test of desihub/desisim#250...)
