Once removed docs next app brought back into repo, located at apps/docs
Use nextra for the docs site, instead of custom making a bunch of markdoc components

Overall, this was super easy. The markdown was already written, so it was pretty seamless transition. Mostly just followed https://nextra.site/docs/docs-theme/theme-configuration 🤷
