Could you update the screenshot, please?
If you don't have a Qt6 build on NixOS, the OSGeo4w package provides one.

which allows you to load a specific ICC profile that defines the color space
for your project. Once applied, QGIS will enforce the selected color model to ensure
consistent color representation.
You can also control the :guilabel:`Opacity` of the color model and choose to :guilabel:`Assign a random color to symbols`.

Well I'm not sure of this. These are the features in the Style tab that were suggested for moving but got rollback in qgis/QGIS#58160.

I tried switching to the light theme in QGIS 3.40.3-Bratislava (Qt 6.8.1) and in QGIS 3.41.0-Master, but I wasn't able to change the theme..

I didn't try recently but switching theme to light in QGIS (actually "default) when the OS theme is dark doesn't switch QGIS to light theme. See qgis/QGIS#33079. Is this what you hit? In which case you might want to (temporarily) change the OS theme and try again?
