On January 5, the Poetry maintainers released v2.0.0, which apparently breaks our workflow. This change pins the Poetry version to stop that happening

Perhaps, when I've the time to read through the Poetry docs properly (and figure out why they changed their CLI), but for now just want it to work quickly |
