Currently the best documentation is in an issue comment. It should be in the main or another readme instead.

Dear,
What is not clear for me is if I have to run the add/remove master/nodes from some node or can I run the procedures from outside the cluster? I mean, when I installed the cluster I run the ansible from another computer and therefore, I don't know where to change e.g the certSANs the /etc/kubernetes/kubeadm-config.yaml file.

You may run it outside the cluster. The configuration files are located in the first master of the inventory which is kind of seed node of the cluster.
