gnome-shell doesn't expose it in the UI (yet) but the functinoality is still available through dbus : https://gitlab.gnome.org/GNOME/gnome-shell/issues/239#note_104848

This would be awesome! I can't tell you the number of times I've been playing a game and gotten a notification from YouTube or Reddit through Chrome, and been so annoyed at having to exit the game turn on 'do not disturb' and get back into the game.
