What

Update the Prototype Kit and its documentation to prefer Node 14 LTS.

We already updated the kit to work with Node 14 and added it to our test matrix in #898, so this should just be a case of updating the documentation and config to work with Node 14 by default.

We will continue to support Node 10 and Node 12, so the test matrix should remain the same.

Why

Node 14 will become the active LTS on 27 October

This major version bump includes a breaking change dropping support for
Node.js versions less than 10. According to our test matrix and PR #942
bumping the preferred version to v14, this is fine. However, we still
want to support Node.js v10, so we can't bump node-sass to v6.
