This LGTM and the naming changes make sense. I think we can proceed with merging the two gutenberg PRs to simplify testing.
ps. I should probably revisit some naming changes on my PRs too (EditorTheme -> EditorSettings)

Description
This is built off of #30544 and adds the iOS side of the GSS setting that is passed from the native apps. This also renames the theme event to update settings to account for the more diverse payload.
@geriux @antonis WDYT? I staged this as a branch off of @antonis's base PR. If we like this naming then we can merge this into that.
