There is an icon already in papirus, but when running QGIS seems to spawn a separate instance with their new icon, for example:
The top icon (I assume) is provided by papirus and the bottom appears when an actual instance of qgis.bin is running, seemingly using the QGIS provided icon (that was released with version >=3).
Secondly, QGIS has a new extension for its project files .qgz which are essentially compressed .qgs files, so it would be nice to have these covered too:
