I have written a script to do this.
It looks back through the git history, per-file, and simply ensures that all files have a "Last updated" date which matches their git history.
We can do this process using the script, just once before each release.
Note that I have included the message "#noupdate" in the git commit message. This ensures that the date-updating script can skip those commits for the purposes of tracking when a file was last updated.
