Purpose of change
Having this be as difficult as canning seems off to me.
Describe the solution
While making a sourdough starter isn't as trivial as just mixing flour and water, it's not that much more difficult. IRL you need to feed it about once a day in the beginning to get it started, but lifetime / yeast death isn't really modeled in the current recipes.
