Help with updating conversion to v11

I have the following conversion working fine in version 10 however I'm unable to use the apply method (I presume becuase it is no longer present in Image v3) and therefore this does not work in v11.

public function registerMediaConversions(?Media $media = null): void
{
    $this->addMediaConversion('thumb')
        ->width(482)
        ->apply()
        ->manualCrop(360, 360, 61, 0)
        ->width(200)
        ->height(200)
}

The images in question are portrait shots of people, that may come in various sizes but the same aspect ratio, which I need to intially resize down and then grab a crop of the head and shoulders. Any suggestions for geting this working in v11 would be gratefully recieved!
