Better explanations for the WIND_MEAN/WIND_MAX measures #17

We should explain why WIND_MEAN is called that way (average wind measured by the windcrop during 20 minutes) and tell that WIND_MAX is a legacy name and means WIND_GUST. We should rename it and deprecate the other in fact. cc @Oupsla
