Org-mode provides a very convenient way of editing plain text tables within Emacs. The table syntax is frustratingly close to the one of Markdown.
See http://stackoverflow.com/questions/14275122/editing-markdown-pipe-tables-in-emacs and jgm/pandoc#519.

What about making Blackfriday parse the '+' sign? (Either at the intersection, or instead of any pipe.)

This is a very specific request, but the fix would be just as simple.
Or else do you know a pleasant way of editing plain text tables?

Thinking about it, I think it would make much more sense to add Org-style table-editing capabilities to Emacs' markdown-mode...
