How should i modify schema role permission.

In parse server doc, i found this:

    "find": {
      "requiresAuthentication": true,
      "role:admin": true
    },

  }
})

But what does it means. is not possible to change it without API REST request ?

I is possible, just put the new value for the full classLevelPermissions.
