Move the CI to use the refactored schematic version

This should speed up conversion to JSON-LD which is currently our bottleneck.

We need to make sure our prod and staging JSON-LD is generated from the latest schematic (at least 24.1.1) before the DCA update tomorrow.

I fear this totally slipped past us. I am traveling without laptop right now but should be able to get us set up with updates and releases by the morning PT tomorrow.

Not sure why this has been sitting as Done in the project board but left open. Moving back into ready for development.

Not critical for the 15 Feb DCA release but we should relatively promptly update our workflow to uses either a fixed or latest pip released schematicpy, rather than using the poetry install from the GitHub repository.
