Thank you for raising this issue! The reason behind this is that Mollie does not currently offer a test mode for Apple Pay. To avoid any potential confusion, we’ve decided not to display Apple Pay when test mode is active.

Whats the reason for specifically, disabling the ApplePay shortcuts when using a test API Key?
It's useful to have the button rendered enabled in these environments, both for testing purposes and working on the surrounding frontend styling.
