Support for pnpm

Commit fully to pnpm or upgrade this into a create-t3-monorepo app that lets you pick your package manager?

(The problem is that these managers all approach workspaces differently)

How about neither! The middle way is to just keep a different branch open for each of these three package managers (though perhaps focusing on pnpm because it's nice).
