Currently only OpenAI models support stuctured outputs via both GSX's outputSchema parameter and then native response_format parameter. At a minimum, we should make outputSchema work for other models via tool calls and consider making response_format work as well.

We can detect if it's a model that supports structured outputs using the client's base url
