em-dashes aren't replaced with regular dash which causes unexpected typing errors #48

I often can't distinguise the EM DASH from a normal one. Even though EM DASHES can be inserted using the command M-x insert-char EM DASH ENT while in a speed-type-session. This is tedious and not a normal character to type on a daily basis for a "regular" user/for me.

speed-type-replace-strings should be extended with a more complete list replacing "unicode punctuation" ("exotic punctuation" used in gutenberg content) with common asci-punctuations. It should still be minimalistic, it's still a custom variable and can be easyiler adjusted by the user.
