Use Expo for building React Native App

Is your feature request related to a problem? Please describe.

The React Native team recommends using a framework, like Expo, for building React Native Apps as of June 25, 2024.

The aws-sdk-js-tests repo had moved to React Native CLI in Dec 2020 because of it's simplicity in #57

Describe the solution you'd like

Evaluate if Expo will be better solution to write a sample application in 2024. If yes, switch to it.

Describe alternatives you've considered

No changes. Continue using React Native CLI.

We decided to go against using Expo at this point since it adds ~20 additional dependencies.

We've incrementally upgraded react-native version in our existing setup which includes minimal dependencies
