Include new crates in release dry run workflow

In #8178 we excluded some crates from the workflow (zebra-scan was bringing troubles(https://github.com/ZcashFoundation/zebra/actions/runs/7661775200/job/20881794125?pr=8178) and probably zebra-grpc will bring troubles after the first publication of the crate).
