Following numpy, I propose that we drop support for python 3.7 https://numpy.org/neps/nep-0029-deprecation_policy.html#support-table
This would mean changing the minimum version in python 3.7 and removing the pytests in gh actions for 3.7, adding 3.10 and 3.11.
