Add option to configure the update of nerfing villager

I need a configuration that can enable/disable the update of nerfing villager which is added in 1.20.2 Java. I really HATE the trade system rebalance (especially the thing that I can discount trade ONLY ONCE with zombifying and curing.)

If there is any kind of way to do this, let me know!
