I've just installed Thunderbird from Flathub Beta, and it uses the same icon name (org.mozilla.Thunderbird) for an icon, unfortunately. Did you get the info from the .desktop file?

I'm not sure about a font because of licenses, but you can draw any pixel-alignment letters for an icon, or use letters from existing icons.
