This icon is hardcoded on a binary file. Not sure that is posible to change it. I'll try it a bit later.

Just notice that icons changing on Unity only. On other DE need to create desktop-files for each qemu binary with the correct StartupWMClass option. I made a script for this https://gist.github.com/SmartFinn/99c98be4915e26d7c6b544d42b500f76
Just save the script and run once.
