A few national resources exist for documenting wheat cultivars. The Canadian Grains Commission website has Canadian wheat classes. Others are mentioned on the https://en.wikipedia.org/wiki/Wheat page. An inquiry with the Wheat Initiative seems to indicate that no effort is currently underway to consolidate more specific wheat terms up to an international level.
This issue is to acknowledge that more work needs to be done here, and interested parties can comment/volunteer!
