Make_Your_Own_Intake_Datastore tutorial doesn't work with panantarctic / regional mom6

I'm trying to encourage new users to use Intake and not the cookbook database, but the Make_Your_Own_Intake_Datastore tutorial doesn't have instructions about what builder to use for regional mom6 models (e.g. PanAntarctic).

There's a possible solution on the Hive here that we could include in the COSIMA Make_Your_Own_Intake_Datastore tutorial to solve this issue.
